Greek Lemon Roasted Chicken

Ingredients:
- 1 whole chicken (about 1.5–2 kg)
- 3–4 lemons (juice and zest)
- 4 cloves garlic (minced)
- 2 tbsp dried oregano
- 1 tbsp dried thyme
- 1 tsp smoked paprika (optional)
- ½ cup olive oil
- 1 tbsp honey or mustard (optional, for glaze)
- 1 cup chicken broth (or white wine)
- 4–5 potatoes (quartered, optional)
- 1 red onion (sliced, optional)
- Salt & black pepper to taste
Instructions:
- Marinate the Chicken:
- In a bowl, mix olive oil, lemon juice & zest, garlic, oregano, thyme, paprika, salt, and pepper.
- Rub the marinade all over the chicken (including under the skin) and let it sit for at least 1 hour (or overnight for best flavor).
- Prepare for Roasting:
