Greek Lemon Roasted Chicken

Ingredients:

  • 1 whole chicken (about 1.5–2 kg)
  • 3–4 lemons (juice and zest)
  • 4 cloves garlic (minced)
  • 2 tbsp dried oregano
  • 1 tbsp dried thyme
  • 1 tsp smoked paprika (optional)
  • ½ cup olive oil
  • 1 tbsp honey or mustard (optional, for glaze)
  • 1 cup chicken broth (or white wine)
  • 4–5 potatoes (quartered, optional)
  • 1 red onion (sliced, optional)
  • Salt & black pepper to taste

Instructions:

  1. Marinate the Chicken:
  • In a bowl, mix olive oil, lemon juice & zest, garlic, oregano, thyme, paprika, salt, and pepper.
  • Rub the marinade all over the chicken (including under the skin) and let it sit for at least 1 hour (or overnight for best flavor).
  1. Prepare for Roasting:
  • Preheat oven to 190°C (375°F).
  • Place chicken in a roasting pan and arrange potatoes and onions around it.
  • Pour chicken broth (or wine) into the pan.
  1. Roast the Chicken:
  • Roast for 1–1.5 hours (depending on size), basting occasionally with pan juices.
  • For extra crispiness, increase heat to 220°C (425°F) for the last 10 minutes.
  • Optional: Brush with honey/mustard mix halfway through for a glaze.
  1. Serve:
  • Let it rest for 10 minutes before carving.
  • Drizzle with pan juices and serve with roasted potatoes, fresh salad, or pita bread.

Tip:

For extra Greek flavor, add Kalamata olives and feta cheese before serving!
