Citrónový krémový syrový koláč

Here’s a delicious recipe for a Citrónový krémový syrový koláč (Lemon Cream Cheesecake) with a crispy crust and a refreshing citrus flavor. This no-bake cheesecake is perfect for summer!

Ingredients:

Crust:

  • 200 g digestive cookies (or graham crackers)
  • 100 g melted butter
  • 1 tbsp sugar (optional)

Lemon Cream Filling:

  • 500 g cream cheese (Philadelphia or similar)
  • 200 ml heavy cream (whipped)
  • 150 g powdered sugar
  • 1 tsp vanilla extract
  • Zest of 1 lemon
  • Juice of 2 lemons (about 80 ml)
  • 10 g gelatin (or agar-agar for a vegetarian version)
  • 50 ml water (for dissolving gelatin)

Decoration (optional):

  • Whipped cream
  • Lemon slices
  • Mint leaves

Instructions:

1. Prepare the Crust:

  • Crush the cookies into fine crumbs (using a food processor or a rolling pin).
  • Mix with melted butter and sugar (if using).
  • Press firmly into the bottom of a springform pan (20-24 cm in diameter).
  • Refrigerate for at least 30 minutes to set.

2. Prepare the Lemon Cream Filling:

  • Dissolve gelatin in 50 ml of cold water, then gently heat (do not boil) until fully dissolved. Let cool slightly.
  • In a large bowl, beat the cream cheese until smooth.
  • Add powdered sugar, vanilla extract, lemon zest, and lemon juice. Mix well.
  • Whip the heavy cream until stiff peaks form, then gently fold into the cream cheese mixture.
  • Slowly pour in the dissolved gelatin while mixing to ensure even distribution.
  • Pour the filling over the chilled crust and smooth the top.
  • Refrigerate for at least 4 hours (preferably overnight) to set.

3. Decorate & Serve:

  • Before serving, decorate with whipped cream, lemon slices, and mint leaves.
  • Carefully remove from the springform pan and slice.
